Today it's a kind of frivolous one. I'm thankful for pumpkins. I know, I know, I've already waxed lyrical about my love of pumpkins, but it's true. I don't know why I have this particular obsession some might call it (and perhaps rightly so), but there it is. There have been very few things with pumpkin I haven't liked. And most of those things I end up liking if I tweak them somehow. A friend put a meme on my wall once of Forrest Gump and Bubba with all kinds of pumpkin things instead of shrimp. How very true and very me. I think part of it for me is the significance of the season. I've always loved Fall and pumpkins are such a huge part of that. When the Pumpkin Spice Latte comes back at Starbucks you know Fall is on the way and then the holidays (which I also love . . . my decorations can get a bit out of control but I love it). When you see pumpkins appear in the grocery stores you know there will also be mums and apple cider. It's comfort and warmth.
Thus far my pumpkins exploits this year include: pumpkin cheesecake bites, pumpkin chocolate chip bread, pumpkin soup, pumpkin ice cream (several kinds but I'm partial to Greater's), pumpkin chocolate chip cookies, pumpkin cake, Pumpkin Spice Latte, pumpkin spice coffee, pumpkin spice coffee creamer, pumpkin cider, pumpkin seeds.
The near future holds: more of the same, homemade pumpkin soup (with pumpkin Mom and I cooked and pureed), pumpkin bread, pumpkin pie, roasted pumpkin seeds and any suggestions you might have. I'm up to try just about anything with pumpkin in it.
